
MADISON, Wis. (WMTV) – If you are looking for a good comfort dish to bring to the Super Bowl in two weeks, consider bringing a dish with a potato.
In Wisconsin, there are six different types of potatoes: Russet, Round White, Round Red, Yellow Flesh, Blue and Purple.
The 77th Alice in Dairyland Halei Heinzel visited WMTV on Wednesday and shared different ways people can use this vegetable.
“The best part about potatoes is they are so versatile; they are a blank canvas. You can fry them, mash them, bake them, all those different things,” said Heinzel.
She said her favorite potato-based dish to make is Cheesy Chili Stuffed Baby Red Potato Bites.
After boiling baby red potatoes, she said she used a small spoon to scoop out the inside of the potatoes. She then mixes chili and cheese together and fills the potatoes with the mixture. She will then top if off with shredded cheese and bake them until the cheese is melted on the top.
One of her favorite things about this dish is you can prep it ahead of time.
“You can do the boiling and stuffing the day before,” she said.” And then on the day of, you can just stick them in the oven.”
In addition to being tasty, they also provide great health benefits, as they are low in calories, high in fiber and a great source of vitamin B6, potassium, vitamin C and antioxidants.
