There isn’t really a wrong way to make mashed potatoes, but Ina Garten is not a chef who settles for “good enough.” She likes to take regular recipes and “make them even better” — and her latest recipe shows exactly how she does just that. The Barefoot Contessa just shared her mashed potatoes recipe designed with cheese-lovers in mind, and you’ll be the hit of your Thanksgiving party if you bring this dish!
She starts by boiling, then peeling and slicing Yukon Gold potatoes. But instead of mashing them like the name implies, she purees them instead with a food mill and a coarsest blade. “People go crazy for these mashed potatoes; they’re so good!” she says in a recipe video shared to the Food Network YouTube Channel. The food mill creates potatoes with “a lot of texture” that’s still “really smooth.” The perfect combination between mashing and pureeing.

Now for what Garten calls the “good stuff”: goat cheese, sour cream, and more ingredients to make it extra creamy and delicious. “I know there’s more cream and butter in this than there are potatoes, but it’s a special occasion right,” Gaten jokes as she stirs everything together. Garten seriously knows the way to our hearts!
You can either serve these immediately or put them in a baking dish and refrigerate for up to three days; then heat up before dinner. This is a great option for those who don’t want to be stressed Thanksgiving morning (or who have lots of other things to bake that day). When you’re ready to eat, add some parmesan cheese on top, then bake. (Too much cheese does not exist!) The finished dish is “fabulous,” according to Garten, and who are we to doubt her expert opinion?!
