Jamie Oliver has revealed the “really weird” recipe that takes the title of his favourite potato dish.
Food content creator Maya Leinenbach had the opportunity to ask the TV chef which potato dish was his favourite, with the 49-year-old sharing an anecdote from “one of the best things I have ever got to do in my life”.
“I did a Christmas cookbook, and there’s a whole chapter on potatoes. But there’s one weird dish in that Christmas book,” he shared, as Leinenbach cut to footage of her making said dish, a potato skin pie, in her own kitchen with his voiceover as a guide.

“I bake potatoes, I halve them, I keep the skins, and I rub them with olive oil and some herbs, and I kind of treat them like pastry in like a baking dish,” the cookbook author said, as Leinenbach gathered five big potatoes, washed them, poked them with a fork and put them in the oven at 180 degrees Celsius for 75 minutes.
She then took them out, scooped out the insides, put the skins in a bowl, added a glug of olive oil, salt and herbs to taste before she laid them flat in a baking dish.

A reasonable excuse to get back into potatoes
“And then I take the potatoes and mash it with incredible cheeses, blend of cheeses and some chopped up fresh tomato and I put it back in the skins and I bake it in the oven,” Oliver shared, while Leinenbach added in her caption that she sauteed one big leek with two tablespoons of butter and added in the potato with 100ml of cream, salt and pepper to taste, and one teaspoon of thyme.
Before she put it back in the oven for 35 minutes, Leinenbach topped the creation with bread crumbs for extra crunch.
“What it turns into is the most amazing mashed potato with the crispiest kind of outside skins, and you can cut it like a pizza. But you can also just go into it like mashed potato and pull the skins out,” Oliver shared.

“It’s a really weird dish, but it’s really, really delicious,” the chef shared.
