
Married serial entrepreneurs Jasmine and Allen Cartwright remember the day the idea for their next great business adventure struck.”I love baked potatoes,” Jasmine Cartwright said. “So I was like, I wish I could get a baked potato that I could just load with whatever I want. I kind of want some macaroni on it. I kind of want some barbecue.”From that idea, Load It! was born. The new restaurant concept is now open on Factory Lane, and the idea is quite simple: customers choose from a number of different bases — including, but not limited to, baked potatoes and French fries — and then select from a variety of hot and cold toppings to go on top.According to Allen Cartwright, he knew the idea could be a hit as soon as he heard it.”It was an instant home run,” Allen said. “From the standpoint of knowing it would be something that people would gravitate to—something people would really like and enjoy.”The pair say Load It! has been a project nearly four years in the making. Now that it’s finally open, Jasmine says it feels great, though she hasn’t had much time to reflect on it.”The endless nights in here cleaning, getting things together, painting,” Jasmine said. “But it feels amazing. We haven’t quite let it sink in yet because we’re all so busy just trying to make it go well.”Right now, Load It! is in a soft opening phase, with a grand opening to be announced in the coming weeks.
