EUGENE, Ore. — Oregon has a state flag, state flower, and a state fish.
Now, it has a state vegetable.
The potato was officially inducted as the state vegetable.
You’d think the potato would be Idaho’s state vegetable, and you’d be right.
But it turns out, potato farming is one of Oregon’s most important crops, bringing in up to $200 million annually.
The designation does more than add a new category to the state almanac; it also opens new marketing opportunities to promote Oregon-grown potatoes.
